Dark Chocolate Breakfast

Whoever said chocolate wasn't healthy? In the right amounts, it certainly can be! The dark chocolate breakfast includes:

  • One piece of dark (85% cocoa) chocolate
  • One carrot
  • One glass of milk with a tablespoon of protein powder
  • Three pieces of fruit (orange, grapefruit, kiwi or a peach)
  • One slice of protein bread with honey

Spread the honey on the protein bread, put the protein powder in the milk and you’re good to go! The only question is: when to eat the chocolate? Volkmar recommends eating it last!

Yoghurt with a twist

Think a yoghurt-based breakfast is boring? Think again! First, gather these ingredients:

  • 1/4 cup honey
  • 2 cups 2% plain Greek yogurt
  • 1/2 cup all-natural granola
  • 1 cup fresh berries
  • 1 cup freeze-dried mango, pineapple and/or berries
  • Small sprigs of fresh coriander

And here’s the twist: add a teaspoon of tandoori spice or curry powder! Now heat up the coriander over a low flame, stirring, until very fragrant, for about 2 minutes. Remove from heat, add honey and stir. Distribute the yoghurt over 4 bowls. Drizzle the spiced honey over the yoghurt; top with granola, fruit and coriander. Enjoy these 11 grams of filling protein with a twist!

Who doesn't enjoy eggs after a morning workout?

Ingredients:

  • 2 large eggs
  • 1 tablespoon 1% low-fat milk
  • 1 teaspoon fresh coriander, chopped
  • 1/8 teaspoon kosher salt
  • Dash of coarsely ground black pepper
  • Cooking spray
  • 1/2 teaspoon butter
  • 4 tablespoons reduced-fat cheddar cheese, grated
  • 2 (8-inch) fat-free flour tortillas, heated
  • 4 tablespoons seeded tomato, diced
  • 2 tablespoons bottled chunky salsa

Now this breakfast will take a little more time and preparation, but it’s well worth it! Here’s how to make it:

  1. Whisk the first 5 ingredients (up to and including the pepper) in a medium-sized bowl.
  2. Coat a medium-sized, non-stick frying pan with cooking spray, and melt the butter over medium heat. Add the egg mixture, and scramble with a heatproof rubber spatula.
  3. Sprinkle 2 tablespoons of cheese along the diameter of one tortilla; top with half of the scrambled eggs, 2 tablespoons of tomato, and 1 tablespoon of chunky salsa.
  4. Roll up the tortilla burrito-style (fold the bottom up and the sides towards the centre). Repeat with the remaining ingredients.
